Eggs Florentine

Eggs Florentine

Cook in a ramekin or in a casserole.

(Serves 4)

Ingredients:

  • 5 eggs
  • 1 C ricotta
  • 1 C Grated Gruyere Cheese (4 oz)
  • ½ C crumbled Feta Cheese
  • 4 Tbls melted unsalted butter
  • 2 tsp crushed dried Oregano
  • 1 tsp grated Nutmeg
  • ½ tsp ground black pepper
  • 2 C chopped Spinach

Heat oven to 350⁰F

Beat together all ingredients other than the spinach. Grease 4 ramekins or a 8”x8” glass pan.

Stir in the spinach , divide among the ramekins or spread evenly in the 8×8.

Bake for 35‐40 minutes at 350⁰F.

Garnish with sliced zucchini or green onion . Especially good with skillet roasted new potatoes.
