Cook in a ramekin or in a casserole.
- 5 eggs
- 1 C ricotta
- 1 C Grated Gruyere Cheese (4 oz)
- ½ C crumbled Feta Cheese
- 4 Tbls melted unsalted butter
- 2 tsp crushed dried Oregano
- 1 tsp grated Nutmeg
- ½ tsp ground black pepper
- 2 C chopped Spinach
Heat oven to 350⁰F
Beat together all ingredients other than the spinach. Grease 4 ramekins or a 8”x8” glass pan.
Stir in the spinach , divide among the ramekins or spread evenly in the 8×8.
Bake for 35‐40 minutes at 350⁰F.
Garnish with sliced zucchini or green onion . Especially good with skillet roasted new potatoes.
